The main series which “Chateau Botevo” Winery produces are Staven and Filigran. Due to the rich variety of sorts, we stake on mainly wines made of some sorts. We select the ones which fit to the main line of the series. The wines produced by the Staven series are mostly fresh and fruit while the ones from Filigran series are more saturated, thick and they mature long time in the barrels.
Staven Pinot Gris & Sauvignon Blanc 2014 – This is a white wine with straw- yellow color, which gathers in it the characteristics of the two sorts. Pinot Gris gives us a sensation for freshness, fruit-grass notes, while on the other side the temperament Sauvignon Blanc gives thickness and juicy of the taste. The wine has a fragrance of ripe citric and tropical fruit like grapefruit and mango, but with fresh grass notes. The carefully selected grape, coming from the grape yards nearby and fermented controlled on low temperatures, it has the spirit of the sunny slopes near the village of Botevo. It is a wine produced under an old technology in modern conditions.
Staven Rosé 2014 – This kind of wine has been produced from the following sorts – Pinot Noir, Merlot and Cabernet Sauvignon under a „white technology“. This combination is not by chance. The sorts Pinot Noir and Cabernet Sauvignon fight each other for predominance long ago. The combination of these two strong rivals in one bottle is a great challenge. So the well-known Merlot comes to help. It balances them and the harmony is being reached with its help. Rosé has a pale pink color, with salmon shades. It has freshness, tender fruit fragrance of red fruit and ripe strawberries and at the same time it has thickness and round of the taste. It is a wine which breaks the stereotypes for Rosé.
Staven Pinot Noir & Merlot 2013 – This kind of wine starts its way from the grape yard where it is shone by the last summer rays, the grape is carefully selected and collected in the wine-cellars. After a long stay in cold place, the grape begins to ferment. The young wine has been just taken from the cold place, it continuous its way to the French and American barrels where its character is formed and built. It is a sort of wine with a ruby red color which has the taste of oak wood but at the same time it has saved in it the fresh fruit fragrance of forest fruit, blueberries and ripe strawberries.
Filigran Pinot Gris & Chardonnay 2013 – This white wine has a straw yellow color and it is produced for connoisseurs who can feel its dignities and experience the delight of being in touch with it. The specific part is that one part of the wine is fermented directly in the barrels. It’s called „barik“. It gives an incredible softness and thickness of the wine. It has incredible harmonic fragrance combining smoked tones, shades of ripe citric fruit, white flowers and honey. The feeling when you drink it is for juiciness with pleasant sourness and long taste after that.
Filigran Pinot Noir & Cabernet Franc & Cabernet Sauvignon 2013 – The history of this sort of wine is long. At the very beginning, of course, is the grape – grown and selected so carefully, collected at the right time in order to express the wine qualities received from it. The wine matures long time in the barrels. It has an incredible harmony expressed by the combination of the three sorts of grape. Sparkling ruby red color, deep and very well saved. The fragrance is interesting and multilayers. The accents of the forest fruit, spices and chocolate are shown up. With soft and balanced body, the wine leaves lasting taste. It is a unique present combining tradition and quality.
